How to Harvest and Cure Garlic

Expert tips for harvesting and preserving your beautiful crop

Garlic is super easy to grow. But the lasting success of your crop depends on how you handle the plants after harvest.  After all, as a cook, you want the bulbs to last many months!

There are three important steps in the harvesting process:              – Digging up            – Curing (drying)            – Sorting

Digging up:  Garlic has a very impressive  root system, but take care when removing from the ground because the bulbs are actually quite fragile and prone to damage.

Curing:  Although garlic can be used right away, it will store for months if properly dried, so that a hard, protective layer forms around the bulb. Do this outside; garlic is stinky!

Sorting:  After curing, sort your garlic bulbs into those you'll use soon, those for long-term storage, and seed garlic for the fall planting. Tips for sorting are on the blog.
