Salad Burnet

A rosette of Salad Burnet stems unfurling their scalloped, cucumber-scented leaves.

One of my all-around favorite herbs, salad burnet (Sanguisorba minor).

First of all, the fingernail-sized scalloped leaves taste like cucumbers. Seriously: Cucumbers.

How cool is that?

Second, this plant has a gorgeous growth habit: it spreads outward in a rosette with central stems expanding upward, unfurling in plush ruffles.

A perennial in my zone 6a, salad burnet needs some elbow room, as it’s a vigorous grower.

Thank goodness.
